phatty carrot cake

Hmmm...what could be better than a cake that's moist, tasty, and all around amazing? The fact that it's vegan! This fatty slice of heaven(shown above) was only but a tiny slice cut out of a 9x13 pan, enough cake for the whole villiage. So maybe the rabbits could have a little nibble...

A 1 ½ medium sized carrots
½ cup + 2 Tablespoons sugar
2 Tablespoons canola oil
2 Tablespoons soy milk
2 Tablespoons mild molasses
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon nutmeg
¼ teaspoon cardamom

B 1 cup flour(whole wheat..yeah?)
1 teaspoon baking powder
½ teaspoon baking soda

C ½ cup chopped walnuts( or whatever it is you like in your cake)

1. oven at 375 please very much. cut the carrot into 1 inch pieces and then in a food processor, combine all of the ingredients listed in section A(yes, this includes carrots).
2. take all the ingredients in section B, then mix them together. Then mix them into Section A mixture.
3. when its all good and mixted, fold in the walnuts.
4. pour into a slightly oiled 9x13 pan and bake for 30-40 minutes, or until toothpick comes out clean.
